I remember my grandpa, he didn’t like fruits and veggies, the only thing he accepted in his diet was watermelon, when I was younger I was not a fan of veggies but loved fruits, I used to love sharing watermelon with him (I still miss him a lot), I don’t eat the amount of fruit I used to and my consumption of veggies is huge but every Summer I can’t wait to indulge with this delicious fruit.
Watermelons are mostly water — about 92 percent — but this refreshing fruit is soaked with nutrients. It has significant levels of vitamins A, B6 and C, lots of lycopene, antioxidants and amino acids, and even some potassium. This refreshing summer snack is fat-free, very low in sodium and has only 40 calories per cup. “The lycopene in watermelon makes it an anti-inflammatory fruit.” Lycopene is an inhibitor for various inflammatory processes and also works as an antioxidant to neutralize free radicals. Additionally, the watermelon contains choline, which helps keep chronic inflammation down, according to a 2006 article published in Shock medical journal. (1)
Something to have in mind, watermelon is still very high in sugar, I know it’s a wholefood but we have to be aware of sugars even if they’re natural.
Now guess why I love watermelons, they’re great for the digestion, they contain good amount of fiber, which encourages a healthy digestive tract and helps keep you regular, not bad for such a deliciousness.
Ingredients
- 8 C. watermelon cubed
- 1/4 C. fresh lemon juice
- One spring of Mint or 1-2 drops peppermint essential oil (only pure therapeutic grade)
Instructions
- Blend lemon juice with mint and strain through a fine sieve. If using peppermint essential oil just add it to the lemon juice, Place the juice in a glass jar
- Blend watermelon in a blender, if you prefer the lemonade without fiber strain the juice with a wire mesh strainer or sieve , I like to leave the fiber to aid with my digestion.
- Add watermelon juice to the jar, mix well.
- Chill before serving
- I don't need to add any sweetener but if you like it sweeter add few drops of stevia or honey
