I’ve been off dairy for over three years, I was never a fun of milk but cheese was my weakness, even if I’m so over it right now I still like to have some flavors that remind me of cheese. I have tried many delicious recipes, even my friends get fooled sometimes when I have them over for some food time.
One of my favorites is nacho cheese, I’ve been making it for a while but the recipe I’ve used is cooked, I was curious of how I could change it to be raw, after some attempts I did a very good one. Hope you enjoy it as much as I did.
- 1 C. raw cashews
- 2 C. water
- Juice of one lemon
- 1/4 medium size red pepper
- 1/4 tsp paprika
- 1/2-1 tsp salt
- 1/4 C. nutritional yeast
- 1/2 - 1 tsp phsyllium husk powder ( you can add an extra 1/2 tsp if you want it thicker)
- Blend cashews and water till completely smooth, add the rest of the ingredients blending everything well, you can storage leftovers in the fridge for about a week.
