Tacos is one of those foods everybody can enjoy, they are fun and can be very nutritious.
These particular tacos are made with grain and nut free tortillas, this is a very easy recipe using Cassava flour, for the recipe CLICK HERE. These tortillas are surprisingly similar to regular wheat tortillas and very delicious. If you have SIBO or IBS these probably are not going to work for you. You can use this recipe if you’re not Vegan.
For the tacos I did a spread of avocado (you can do guacamole too), salad greens, beef (for the hubby), cod fish (for me), some local salsa and hot sauce (just for fun) and mango salsa (recipe below).
Something I love this time of the year (Summer) is all the fresh fruits available, I keep my fruit intake low but not during Summer, this season I indulge and feel great about it. One of my favorite fruits is mango, they’re abundant in my Country Colombia, I grew up having mango in big amounts, my grandma had a mango tree that gave us tons of pleasure.
I made this mango salsa without onions to keep it SIBO diet friendly, even if we supposed to keep fruit intake very low, a little indulgence is OK at least for me.
For the tacos you can use anything you like, we had fish and beef but chicken, turkey or beans for Vegan will work. Make them fun and enjoyable.
- 1 big mango peeled and chopped into small squares
- A handful of cilantro chopped
- 1 Cup chopped tomato
- Lemon juice (I used a whole lemon but adjust to your liking)
- Salt and pepper
- Mix all ingredients in a bowl.
- For best flavor let the salsa rest for at least 10 minutes or longer.
